Buttery Chilli Garlic Prawns

My favourite people are multipotentialites, and the same goes for recipes. I adore recipes that are flexible, dependable, and adaptable to different occasions. These Buttery Chilli Garlic Prawns are a perfect example. With simple ingredients you likely already have at home, minimal prep, and a quick 20-minute cook time, this dish is perfect for savouring the last balmy days of summer. It’s a burst of bright, zesty flavours that brings warm satisfaction! I’ve made it twice for hosting guests in the last few days, and I’m pleased to report that it is already a crowd pleaser! Ingredients:

  • 180g bag Sainsbury’s Large Frozen Raw King Prawns 
  • 2 cloves garlic, minced
  • 2 tbsp salted butter
  • 2 tsp extra virgin olive oil
  • 1 tsp dried red chilli flakes
  • 1/4 cup chopped parsley
  • Pinch of salt, to taste
  • Juice of 1/2 a lemon

Method:

  1. Prepare the Base: In a cold pan, add the butter, olive oil, salt, chilli flakes, and minced garlic. Heat gently. The olive oil helps prevent the butter from burning.
  2. Cook the Prawns: Once the buttery garlic mixture is sizzling gently, add the frozen prawns straight from the bag. Sauté, moving the prawns around to ensure they’re evenly coated.
  3. Finish Cooking: Cook on high heat until the prawns are fully cooked—plump, orange, and the water released has mostly evaporated, leaving a glistening butter sauce.
  4. Add Freshness: Stir in the chopped parsley and a squeeze of lemon juice. Mix well, then immediately transfer to a bowl to serve. Can be served hot, room temperature, or cold – delicious either way.

Serving Suggestions:

These Buttery Chilli Garlic Prawns are delightful as a main dish with chunks of crusty bread to soak up the sauce. For a light and delicious meal, toss the prawns with pasta.
