Tree Tomato (Tamarillo) and Berry Crushes

This was my very first encounter with tree tomatoes also called tamarillos. They are intriguing, and really hard to describe. Imagine a cross between a tomato and a kiwi.  They ooze very red, which is a little disconcerting. I’m surprised they don’t get more airtime around Halloween! The ones I got were a little on the tart side, so pairing them with sweet berries and jam created a balance. The colour payoff was breathtaking – a rich and wonderfully assured spectrum of reds. Tamarillos are packed with vitamins and nutrients, and it was exciting to encounter this super fruit in Kenya.

Ingredients

3 tree tomatoes

3 cups frozen mixed berries 

6 tablespoons of good quality berry jam (a homemade or artisan brand is best)

Mint leaves for garnishing

 

Method

  1. Place all the ingredients in a food processor and blitz until smooth
  2. Spoon carefully into champagne glasses for dramatic effect, and garnish with a sprig of mint
