Port Papaya Salsa

Port Papaya Salsa

If you are after a fresh, summery salad, this is a great one to try. It combines paw paw, heady and sweet, with fresh elements like cucumber and tomato to make an exciting side dish. The port in the dressing accentuates the paw paw brilliantly and this surprised even me, as I’m not usually a fan of fruit in savoury foods. A beautiful and colourful addition to any table!

 

Ingredients

1 medium sized, very sweet pawpaw, cubed

2 tomatoes, chopped

1 cucumber, chopped

2 tsp chopped onion

½ tsp fresh rosemary, finely chopped

1 lemon or lime juiced

50ml port wine

200ml olive oil

Salt and black pepper

 

Method

In a large bowl, squeeze the lemon or lime juice onto the pawpaw and mix well. This will keep the pawpaw bright and fresh. 

Add the tomatoes, cucumber and onion and mix it all in to create the salsa.

Now make the port dressing. Combine the port, olive oil, and a pinch of salt and black pepper in a jar with a lid. Give it a good shake until the ingredients are well combined. 

Pour the port dressing over the salsa and sprinkle with the rosemary. 

Serve and enjoy!
