This sauce is a great multipurpose accompaniment to many grilled meats, seafood, vegetables, and can even work as a marinade. It combines the full force of herbs, the confident support of pungents and the joie de vivre of fresh citrus to bestow anything it touches with a sparkle. Ingredients
2 big bunches parsley
2 medium onions
2 cloves garlic
2 pieces of ginger
2 oranges, juiced (or 100ml orange juice)
200ml olive oil
4tbsp rice wine vinegar
4 tsp rock salt
Method
Place all the ingredients in a blender or food processor and blitz until a wonderful bright green sauce emerges.
