This recipe takes your average roast chicken up a notch with texture and a nutty flavour. Cashew nuts are plentiful here in Nigeria, but feel free to use whichever nuts you have handy. This goes down well with both adults and children (but make sure to ask if anyone has nut allergies before you serve them this!)
½ cup cashew nuts
½ cup fresh basil
½ cup olive oil
1 tsp table salt
½ tsp black pepper
2 tbsp natural yoghurt
4 chicken drumsticks (or thighs)
- Season the chicken lightly with salt and black pepper. Set aside on a foil-lined baking tray.
- In a food processor, blitz the cashews, basil, olive oil and yoghurt until smooth.
- Pour the mixture onto the chicken and bake in the oven at 180*C for 25 minutes.
- Switch the oven off but keep closed for a further 10 minutes. Serve and enjoy.
