This beetroot and carrot slaw is a quick and easy salad alternative that tastes bright and fresh and energising. I designed this to be a healthy and super tasty side dish. Beetroot and coriander are both known to be detoxifying to the body and you will notice this is a slaw with no mayo. The raisins add a lovely naturally sweet note.
Ingredients
1 large beetroot, grated
4 medium carrots, grated
1 handful golden sultanas (or regular raisins)
2 sprigs coriander, chopped
Dressing:
1 lemon, juiced
3 tbsp olive oil
Salt to taste
Method
Place the beetroot, carrots, sultanas and coriander in a bowl and mix until will combined.
Drizzle on the dressing i. e. lemon juice and olive oil. Season with salt to taste.
Mix again and store in the fridge for about 1 hour before serving in order for the flavours to meld.
Tip: – If you are out of ingredients you can skip my dressing and use any store bought vnaigrette or dressing you like.
