Kilishi is an incredible dried beef delicacy from Northern Nigeria. It is spicy, rich, and has a wonderful umaminess to it. I decided to use it to spice up a potato salad. It really does elevate the potato salad from a boring side to a spicy, exciting feature on your table. This recipe also features some other vegetables like parsnips which add a nice transluscent crunch; and fennel which bring in a whole other dimension of flavour. If you don’t have these to hand, just make up the quantity with regular potatoes, sweet potatoes, squash, or even cauliflower.
Ingredients
1 packet of Kilishi, broken into pieces (use biltong as a substitute)
10 potatoes, cubed and boiled
6 turnips, cubed and boiled
1 heaped cup frozen mixed vegetables, boiled
1 fennel, chopped and pan seared
1 handful mixed fresh herbs
2 tablespoons chopped onion
1 clove fresh garlic grated
A glug of olive oil
1 teaspoon English wholegrain mustard
2 – 3 tablespoons mayonnaise
1 splash white wine vinegar
Salt and black pepper to taste
Method
- Mix all the vegetables together in a bowl.
- Add the mustard, mayonnaise, olive oil, fresh herbs, onion, garlic and herbs, and mix.
- Season with salt and pepper and a small splash of vinegar.
- Now add the kilishi and mix in well. Allow to cool in the fridge for the flavours to melt and then serve.
