Don’t let them tell you that yam does not like to dress up and play fancy dress. This is a wonderful supper dish for when you want something that is both ornamental and satisfying. It is great for sharing too, so why not take this along next time you’re invited to potluck?
Ingredients
7 – 10 small red mullets, cleaned
3 frankfurter sausages, sliced
2 slices boiled yam, cubed
4 sprigs fresh thyme
¼ cup or about 60ml sweet chilli sauce
3 spring onions, chopped
Salt
Black pepper
Olive oil for shallow pan frying
Method
- Season the red mullets with salt and black pepper and shallow pan fry lightly in olive oil – about 3 minutes on each side should do it, but perhaps a little more depending on the size. Remove the fish from the oil and drain off any excess oil in a colander or using a kitchen roll.
- In the same pan, saute the sausage slices, boiled yam, fresh thyme, spring onions and sweet chilli sauce. Allow to heat through so everything is evenly coated in sweet chilli sauce. Feel free to add more sauce if you want.
- Arrange the red mullets on a platter and carefully scatter the sweet chilli yam mixture evenly over the fish. Garnish with a little more fresh thyme if you wish, and serve.
Serves 4 modest people. But you might want to make more because it disappears so fast!
