This is my go-to recipe whenever I’m feeling a little out of sorts, or tired. After one of these, I feel refreshed and better able to navigate a stressful day. This has been such a favourite recipe for me, and especially now with all the doom and gloom on the news, I wanted to share it to help cheer you up too .
Yes, it contains all the wonderful vitamins and antioxidants and gut friendly and immunity boosting features of the components, but it is the feeling of vitality and energy restored that is most special about this. It is so refreshing and triumphant that even my toddler loves it – that has got to be the highest endorsement of a green smoothie ever! The concept of a pineapple + green leafy veg smoothie is by no means new. However, I have a new take on it which I think makes a difference.
The secret ingredient in my version is a superfood which I’ve recently fallen in love with – Baobab. Just a tablespoon or two of this added to the recipe adds a subtle citrusy creaminess which kind of emulsifies the distinct fruit and veg components. I think that that sensory upgrade alone works wonders. In addition to the fact that the health benefits are amazing. You can read more about Baobab here; but long story short, it is apparently antiviral, anti bacterial, great for skin, weight management, controlling inflammation, improves digestion and blood sugar balance. You are probably now wondering where to get Baobab in Lagos. I get mine from Clay Foods in Lekki. They always have it in stock and I buy the big tub which lasts ages!
I always have some pineapple and leafy greens in the freezer, saved into portion sized ziploc bags so I always have it to hand when I’m craving this smoothie. Having these frozen or super cold is key to its enjoyment.
This would be very nice to try out but am not sure where to get baobab powder in Ghana.
