I’ve had to admit to myself recently that ice cream has become a bit of a problem. The daily indulgences cannot continue. Therefore, I am going to have to swap it with something that has the same refreshing, happiness-inducing effect but is infinitely less naughty. Enter these Mango Nicecream Popsicles, which are really just a mango smoothie dressed up as ice cream. Good, harmless fun.
With no added sugar, and lots of fresh fruit, these are totally guilt free, and can be enjoyed by the whole family. This is the kind of dessert I plan to make loads of and have in the freezer as our family grows, to make sure that even in our snacking, we are healthy.
Mangoes keep well in the freezer, so you can freeze a whole bunch of them when they are in season so they are available to make this recipe all year round.
Ingredients
2 large ripe mangoes or 6 small ripe sherry mangoes
1 banana
1 lime, juice only
1/2 tsp grated ginger
3 tablespoons natural yoghurt (optional)
Method
1. Blend all the ingredients in a food processor until smooth.
2. Pour into popsicle moulds (this should make about 8)
3. Freeze overnight, serve and enjoy!
